My Quiet Sunday: Roast Beef, Vegetables and a Calm Day at Home

A simple, steady day built around a home-cooked roast using the air fryer.

Some Sundays are busy or full of plans. This one wasn’t. It was a quiet day at home, and most of it revolved around preparing a straightforward roast dinner using my Ninja air fryer.

Nothing dramatic happened. It was just a calm day with a warm meal at the centre of it.

Slow-Cooked Beef in the Ninja Air Fryer

I started by putting a small joint of beef into the Ninja air fryer and cooking it slowly until it became tender. The smell built up gradually through the day and gave the house that familiar Sunday feeling.

Simple Beef Gravy With a Little Horseradish

To go with the beef, I made a straightforward beef stock gravy and mixed in a small amount of horseradish. It added a bit of warmth without overpowering the flavour.

Vegetables Cooked Plain and Simple

I kept the vegetables simple:

  • steamed broccoli
  • steamed carrots
  • sautéed cabbage

They stayed bright and tender, cooked just enough without being overdone.

Mashed Sweet Potato and Garlic Roast Potatoes

For the sides, I made:

  • mashed sweet potato – smooth and slightly sweet
  • garlic roast potatoes – crispy edges, soft inside

Both were done in the air fryer with very little effort.

A Yorkshire Pudding to Finish the Plate

To complete the roast, I made one large Yorkshire pudding. It came out light and golden, ideal for holding the gravy.

A Still, Easy Sunday

The day itself was quiet and steady. Cooking this gave the day some structure and made the house feel homely.

It wasn’t an exciting day, but it was a peaceful one — and sometimes that is enough.
