🛒 Ingredients (Serves 2)



  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 small parsnips, chopped
  • ⅓ of a small swede (rutabaga), diced

🍲 Method



  1. Chop everything roughly — no need for perfection.
  2. In a large pot, throw in the onion, garlic, parsnips, swede, broccoli, and cauliflower.
  3. Pour over enough water to just cover the veg (about 1 litre).
  4. Add turmeric, coriander, mixed herbs, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for around 25–30 minutes, until everything is soft.
  6. Blend if you like it smooth, or leave chunky for texture.
  7. Taste and tweak seasoning. Serve hot.
